Corsu Vecchiu

Corsu Vecchiu is a traditional Corsican sheep’s milk cheese produced by Fromagerie Corsica and aged for several months to develop a firm, dense texture and rustic natural rind. Made in the tomme style, it reflects the rugged landscape and pastoral traditions of the island of Corsica.

The flavor is savory and well-developed, with notes of toasted nuts, wild herbs, caramel, and a subtle grassy character typical of Corsican sheep’s milk cheeses. Its rich texture and earthy depth make it an excellent addition to a cheese board alongside charcuterie, preserves, and full-bodied wines
